Customarily, Germanic villages burn bonfires to chase away the witches flying above the townspeople on their souped-up broomsticks, or to scare and rid the village of evil spirits, or any other mischievous entity that might be lurking about. 

In real life, void of filmography magic, witches walk with their brooms through the forest communing with nature sprites while above them fly the illumined men and women of science in their saurian metal flying machines. With that said, the Lady with the pointy hat often looks like she's having more fun. Perhaps she and her Coven have hitched a ride on the contraption of the illumined scientists just for a giggle.
